Never throw away your unused sourdough starter! Use it to make delicious and chewy spring onion pancakes. Easy and quick, you must give this a try!
All you need to do is mix 1 cup sourdough discard (fed or unfed), 1/2 cup flour and 75-100ml water, enough to make a stiff batter. I use wholemeal flour and my starter is also wholemeal.
Add 1/2 tsp salt and diced spring onions and does it! I also like adding some garlic chives, minced garlic, pepper and a touch of 5-spice powder.
Heat up a frying pan on medium heat with just a touch of oil and spread the batter thinly on the pan.
Cook for 3-4 minutes, drizzle a bit of oil on the top and flip the pancake. Cook until golden brown.
Serve with a traditional black vinegar, soy and chilli dipping sauce or have it for brunch and eat it with mashed avo!
